At Espelette’s covered market, this AOP tasting workshop brings producers and consumers around some of the Basque Country’s protected products: Ossau-Iraty cheese, Espelette pepper, Irouléguy wine and Kintoa pork. The interest is direct and regional: tasting becomes a way to understand appellations, farming work and local food identity through the people who make and defend those products.
